THREE INGREDIENT BANOFFEE PIE (Vegan)
I love desserts / sweet treats, but I really hate the fuss that comes with making some of them and I think I can speak for most people when I say you just want something quick, easy and healthy that tastes bomb.
I hadn't had banoffee pie since going Vegan so I thought I'd put my own spin on making a quick and simple recipe, using few ingredients by extracting the three main flavours of the classic dessert.
I used a biscuit base with a date toffee sauce and a banana nice cream topping with chopped banana in the middle. You definitely want to serve this recipe in a jar. It's much less hassle and gives a really nice edge to the presentation that you can really impress your friends and family with!
INGREDIENTS:
- 6 bananas (four frozen, two not)
- Hobnobs (or any biscuit of choice. You can even blend up nuts and oats)
- 6 dates
OPTIONAL INGREDIENTS:
- Vanilla bean paste
- Cinnamon
(Makes 2 jars)
STEP 1
Grab your jar and crush as many hobnobs desired into the bottom of the jar then you want to use one sliced banana for each jar and place those on top of the crushed biscuits.
STEP 2
Now it's time to make the date toffee sauce. You want to pit 6 dates and blend them in a food processor with a 3/4 cup of water. It's inane how good this turns out! You'll know what I mean when you make it. Mouthwatering. Now layer that on top of your biscuit base and chopped banana and proceed to the next and final step.
STEP 3
Last of all you want to make the nice cream. Most vegans have made nice cream 100 times over before and know the drill, but if you are a novice vegan all you want to do is chuck your four frozen bananas in a processor and blend until smooth. I add a little bit of soy milk and vanilla bean paste to add extra creaminess. Just add that on top of all the other ingredients and then dust with some cinnamon if ya want!
It's so cool how this simple recipe can taste like other banoffee pies recipes you may be familiar with.
By replacing the usual creamy fattening topping with banana nice cream really makes a very refreshing change up and is a whole lot healthier too.
