EASY DIY SPINACH GNOCCHI RECIPE
It's about time I made my own gnocchi recipe. It is my go to food when I get home late or if I am a little short for time. It's super easy to make and once prepared it cooks in about 2 minutes and you'll have quite the batch to store away to feast your chops on.
You could quite easily buy it from the shops but who wants the preservatives and other rubbish anyway and there is nothing more satisfactory than making your own food. Especially when it's this easy and delicious.
So without blabbering on too much, here we have my easy (Vegan) DIY spinach gnocchi recipe.
INGREDIENTS:
- 1 large potato
- 1 handful of spinach
- Flour (eyeball it until texture is right)
- 1 teaspoon of olive oil
- Salt and Pepper
STEP 1
Peel and chop up your one large potato into about 2 or 3 chunks (so they will cook quicker). Then place your potato in a pot of salted boiling water and cook until completely soft and cooked.
STEP 2
Whilst you're waiting for your potato to cook, blend up your spinach in a blender or processor until fine and then place into one large mixing bowl along with your oil all ready for preparing the gnocchi.
STEP 3
Once your potato is done, rinse it with cold water until cool, then place it into the bowl with your other ingredients, add a good helping of salt and pepper and start mashing the potato in with the spinach and oil until smooth, leaving no big chunks of potato in the mix.
STEP 4
Now add in the flour a bit at a time and mix and knead until it forms a non sticky dough like the picture below.
Once you have gotten that down, you can start forming the little gnocchi balls and placing them on a clean service. TIP - If they are sticking to your hands or surface then you'll need to add a bit more flour to your mix. If you've smashed it they should look like the picture below. (little lines are optional but they add a nice touch) You'll also have a surprising amount of dough made, so make what you feel is one portion and tub the rest up and store in the fridge for another time.
STEP 5
Once you have formed and shaped your gnocchi, place them in a pot of boiling water and wait for them to cook. They should take about 2-3 minutes and should float to the top of your pan and have increased in size once cooked.
You can now plate up and enjoy!
Nobody likes to eats gnocchi on its own so choose a tasty sauce or dressing to go on top. I've chosen to add red free from pesto onto mine but the options are endless.
